Currently I am the 'lead learner' and facilitator.
I have learned a lot here in 4 years but have not been teaching the Pi consistently all that time.
Now that I have new RPi5s...
They're the same as the old Pis. They're just like any Unix box.

But, to answer your question, just do it. You only have to be one page ahead of the students. Pick a topic, e.g. Sonic Pi, try it yourself and make sure you can get it working, download some exercises and run through them then present them to the students. If you can't get it working then move on to the next topic. Rinse and repeat.

Most of the stuff for Pi will work on Pi 5, but you need to test it. Anything that uses GPIO needs a new GPIO library, but most of the projects out there weren't made with that in mind, so you'll have to research in detail.

As an educator you ought to be able to put together a lesson plan for what you are trying to do, then google for the details and test it.
