Thanks for the tips! Using public WiFi does seem stable enough for calls and updates. You're right that a RPi isn't the most practical as my only device, so I'll bring my laptop too. To avoid issues with the language barrier, I've booked a local guide from https://gowithguide.com/korea for assistance in buying a SIM card and with navigation. I'll also check out that LibreTranslate app you mentioned. It would be great to have offline translation as a backup.Stability and speed are different things. Is most urban areas stability will be pretty common. The onboard wifi on the pi will be able to handle updates and the such at a reasonable speed. If it is not good enough bring an Ethernet cable and plug in. You would be surprised how many commercial spaces have a rj45 jack. If you really need the mobility then a hot spot would be nice if your not sure you will be staying in a place with wifi.
My only real concern is how you are operating this device. Are you just bringing a hdmi wire and using whatever available screen is in your area or are you just going to ssh into it from another device? Running on the official pi touch screen and battery packs with all your peripherals is more complex then just getting a laptop. You might wana pick something else. Laptop coversion cases do exist for a pi but they are pretty pricy compared to just getting a used chromebook off ebay and throwing linux on it.
Additionally if you are just watching a vid call there should be no issue. However participating in the call will require a webcam. Streaming high quality video is already hard enough on a pi. uploading your own vid will likely overwhelm the device. A pi is not super powerful so make sure you limit the resolution.
Ive never been to Korea but i have been to places where the locals dont speak English. With a language barrier it will be a bit more hard to communicate a purchase. If the seller dont speak English give then LESS money then you think its (travel sim) is worth. If they need more they WILL motion for more. If you give them more to be polite or whatever (depending on where you go) they will take advantage of you. This was something i learned in Mexico where Spanish is the dominant language and merchants dont always post prices so paying is kinda a guess. Thats more of a general travel tip though.
