Thanks again, David. After the bootloader update, the pi now boots from the 256GB SSD. I'm dd-ing the 32GB-->256GB again right now and will come back if any problems.
The bootloader update wasn't a great experience. All I saw was a blank green screen and the pi's green led flashing. I thought initially something had gone wrong, but a Google search revealed this is normal!
