I did that with Pi4Bs. I really prefer the tidier packaging with an M.2 HAT+ in the official case. Even nicer is the Pineboard Nano that allows the case lid to be put on.Personally, I use an external SSD, connected via a USB to SATA cable, placed underneath my RPi5 in its recommended case.
Works well for me, but if I didn't already have disks, I'd go with an NVME drive.
