For the display I'm guessing it's about 6" wide, since the unit is a 10" cylinder.
VFD is probably out of the question, but perhaps two 3.1" OLED modules side by side would look ok?

IR remote has been supported since forever by lirc, but you probably want to attach your own receiver to GPIO instead of finding a hat with one. Although a brief search gave me this:
