Just to mention one point: you can not switch a consumer with the "thermostat switch" AND monitor the wires with a RPi. At least not in a simple way.

Usually in real world environments the wire lengths are long. And there is noise, spikes, radio frequency which need to be handled. Most hobbyist projects are not designed to handle this.
