I have a new NVMe stick with an M Key USB-C enclosure.
The stick needed formatting so I ran Terminal commands cfdisk, then mkfs, then gparted which all successfully formatted to FAT32.
However data won’t write to the stick?
I used File Manager to copy data from the Pi5 desktop OS and right clicked to paste into the USB stick, but nothing happens.
I checked USB stick permissions and I think from memory there were some w permissions?
Gparted does show a red triangle on the partition.

Did you check for that? (IIRC that's probably what the "red triangle" is about.
(NB. I'm doing this on a Pi)
