If you want a real easy solution to make all the configuration changes, have a look at sdm. sdm enables you to quickly and easily make all those configuration and customization changes, and do it in a repeatable manner.I am now looking into a much easier solution. I plan to make script that make all configuration and then just release the application instead of complete OS.
I am not sure if the script will be able to handle everything like enable UART, SSH, speed of I2C,...etc.
I have to give it a try.
