Well at some point the solution becomes too complex. For me the point is when adding something that must be reliable behind usb hub or adding second power supply. Or when adding a fan to a Pi. Pi is small, silent, with relatively low power draw and even the price is not so bad when you don't add ton of stuff on top of it. When you do, these advantages go away. You end with nest of cables and the low price, reliability, small size, low power is no longer there. Long support, yes, that's true when compared to random ARM SBC or the NAS you linked, but when getting some pretty standard PC (like some intel/amd thin client) it will be a very long time until debian/linux kernel stops working on it.As someone considering a Pi 5 based NAS, my main reason is the Pi will be supported longer.
