Definitely need separate buck convertors. However since you are using them for the Pi and the servos look at a slightly higher PSU, i.e. 12V nominal at 50-ish Amps. Several of these are around used for things like recharging fork-lift trucks.
As for make vs buy, buy off the shelf. Buck convertors often go bang until you get everything right. We went through about half a dozen iterations for a solar panel convertor until it was totally reliable.
