I have built control systems based on the pipico operating in harsh environment such as yours: operating in CNC and Lathe workshops. You might want to consider using some kind of Enclosure and Shielding. Use a conductive enclosure for your project to provide shielding against external RFI. Most importantly, you must properly ground the enclosure.
