The Raspberry Pi OS images have SHA256/SHA1 integrity info ,.some meta data and signatures and bill of materials iirc along with a torrent link if you prefer them.
The OS isn't downloaded from GitHub, but from different servers.
You'll need to add the Raspberry Pi OS repository if you want the deb files via apt. Or look in their downloads area
