My bets are on a power issue, have a look in your kernel logs for USB dropping out which isn't definitive but is indicative.
The network adaptor takes 400mA, SSD 1.7A but you have the SATA adapter and the 3.3V inverter in that which take powerl. and the Pi Zero as well. SSD can have low mean currents but high surge currents for the erase/write inverters.
You could lay you hands on a SSD with much lower power or go for a powered hub..
