Please note that I am a complete Raspi novice.

I have a Raspberry Pi 5 and have installed OS-lite on both an NVMe and an SD card.
First on the SD card, as it was easier to correct in case of failed attempts. It runs flawlessly on desktop and tablet.

What "runs flawlessly on desktop and tablet"? It can't be RPiOS.
However, I would like to use OS-lite only on the NVMe.

  1. Shutdown
  2. Remove SD card
  3. Boot
If that doesn't work replace the SD card, boot, then check your EEPROM boot order and the official documentation (link at top of page).
But I think I have two (or now even more) different hosts on the SSH server. How do I get rid of them?

I don't understand that. The ssh server runs on the Pi using the Pi's hostname. Unless you have configured it differently it will only have one hostname. However the hostname when booting from SD could be different to the hostname when booting from NVMe.
