PINN on a PiZero 2W uses the legacy video drivers, so your first option of editing config.txt is the way to go. Adding the "video=" option to cmdline.txt is for KMS displays and would only be relevant on the beta version of PINN on the Pi5.
The options you chose seem reasonable (I often use hdmi_group=2, hdmi_mode=28 for a 1280x800 display using hdmi-vga adaptors). I'm not sure why it shouldn't work with your monitor. I would have said it could be an EDID problem, but your config settings would be overriding that anyway.
Actually PINN can use any of: sha512, sha256, sha1 or md5.The PINN now uses sha512sum and not sha256sum (I didn't use sha but just a noticed it)
