I feel it's very complex and most likely a perfect setup to increase latency (which is not what musicians want)
Why not start with a basic USB2IP adaptors like this ?

I suspect that's USB over ethernet cable not USB over IP over ethernet cable. I'm really dubious that it will work through routers and network switches too.

At less than 10 euros for the pair I'd expect them to be entirely passive devices that do nothing more than connect pins in the USB connector to pins in the RJ45 connector.

To do USB over IP over ethernet cables you'd need active devices at both ends and, without a PoE network switch, a 5V power supply at the device end. You'd also need real ethernet interface hardware at each end. Especially if you want to connect it via a router or ethernet switch.

It'd need to be gigabit ethernet too if you want to run USB2 devices at high speed.
I often use such devices for controlling motorized heads for video cameras at over 50m with no problem during live productions... Good ethernet cable is the key.

and for 10€ I think it's worth trying before going any further...

PS : yes you will also need USB-A to USB-C adaptors... Not a big deal...

OP wants wireless. But, yes, if OP can't get a long enough USB C cable (which I suspect will be the case if they want more than three or four meters) and need to abandon WiFi it's probably worth a try.

Hmmm...

There was a standard for wireless USB but I don't recall ever seeing any products that used it and it was withdrawn quite a long time ago.
