Please narrow this down and give me one or two articles I will use; I want to make it very complex.

Not really - those links are what I would class as the basics as they cover the processes, some open source code bases and a few alternatives for you to consider as your development toolset (one of your questions).

You really need to do your own research to decide your direction else it's a basic copy / paste exercise.

Just a friendly heads up, I've been coding professionally for 40 years (C, C++), and I would not even think about writing my own OS. It is a very difficult and time consuming process. Just writing a 'simple' Linux kernel driver takes ages. But don't let that put you off, if you want to do it, go for it. I think it's worth just giving you some warning about the perils ahead.

Personally, I'd start on the Pico and write a basic OS for that, much easier development.
I've been involved in a couple (inc change management of an EPOS OS codebase that was on a cupboard full of floppy disks  ) and the guys that do this are a different breed of coders in my mind.

The Pico idea is a good one as there are lots of modules that could be built in for common device and sensor support once the basics are tucked away...
