Could be complicated find out what is inside a special device and reuse it.

You could drill a hole into your bin. See https://www.sensorshop24.de/temperaturfuehler for various packages of sensors. Most of the devices on this page can be provided with DS18B20. This web page has dimensional drawings on the page.
Perhaps the producer of your hotbin has some advice on where it is best to drill a hole for measuring.

If you need a thin wire sensor, then look for https://www.adafruit.com/product/1778 with a sensor like https://www.adafruit.com/product/270
Wires can' be arbitrary long, so you need a local pico or RPi with suitable housing and power supply.
