How clean is that 12V in? What is the bandwidth of those power sources?

The better the bandwidth the better the power. LED panels driven from 60Hz transformer will require a lot of a storage. Large storage is challenging in certain frequency ranges due to impedance. This gets into an area of expertise, without it I recommend purchasing professionally verified designs by consistently reputable brands.
The on board power is a step down. It is rated for only certain types of operations. It is a cost effective way to manage thermal. Power, thermal, mechanical, chemical, shielding, geometry and signals are an important topics in circuit boards and cabling. (Maybe there are others.) Now circuit boards can get very complicated, but there are tricks to keep them simple. These tricks work off the rules themselves but define a limit to the overall size, cost and function. If you know these rules well enough you should be able to move up to bigger things.
For linear systems use a voltmeter. For non-linear systems use an oscilloscope. Try to design non-linear systems into linear systems. (Use active power management with feedback when possible.)
