Yes, of course it is about selecting the right layout. I can always go through the choices and hopefully find one that works, and I guess I will just have to try. I was just hoping that someone already knew the answer and would give it.
On the GUI, if you select, ENGLISH UK as your keyboard; you can then select umpteen "variations". Several relate to Macintosh layouts....
In X11, it was fairly straightforward to modify keyboard layouts manually...but I think that's changed on wayland.....someone else may know how to do that.
One thing that you could do as a workaround is to install a soft keyboard like "onboard" to do the keys that you cannot do from the hard keyboard.
sudo apt install onboard
