I finally found an answer for typing the pipe character, without having to look at all possible keyboards. Many instructions assumed one had a Windows keyboard and a numeric keypad, so didn't work for me.
One can use the Unicode character set by typing ctrl-shift-u followed by the code 007C (and possible the enter key after that).
The other keys I had trouble with were the double-quote and the at key, but these were just swapped between my keyboard and the Pi's input, so that was easy. But I haven't found out a straightforward way of getting the pipe by a single key combination
