100% only one hdmi cable is required to boot the pi. Mine works with monitors and various TVs. I am using a hdmi cable sourced from Raspberry Pi, they seem to be the best value for money and no adapter required.
I've had Pi 5 since week 1 and never used the second hdmi port.
It works fine in basic configuration with Pi 4 PSU. Or another USB C power supply unrelated to Raspberry Pi.
