This has gone in a completely different direction now. In reversing my wired connection modifications just to see if either the Pi-hole or disabling IPv6 was somehow affecting remote desktop connections (both VNC and Raspberry Pi Connect were affected). I found that the problem was, the HDMI display was asleep! Previously establishing a remote connection was automatically waking it up. Not so any more? As long as the display is awake (it automatically goes to sleep after 10 minutes of no activity) the remote connections work. The "gray screen" seen otherwise simply represented exactly what was on the screen. Which rather defeats the concept of Remote Desktop.

OK, so I'd re-Enabled IPv6 (DHCP only) and pointed IPv4 DNS to the Gateway address rather than the PI-hole using the now improved Raspbian Desktop Network Management rather than in the terminal, and just rebooted rather than start & stop the network to apply the changes. After discovering remote desktops were working I put everything back exactly as I'd had it, IPv4 DNS pointing to the Pi-Hole and IPv6 Disabled, and reboot again. Remote Desktops were working. Let the display go to sleep... and now they wake up the HDMI automatically again! Go figure? It had been quite a while since the system had been restarted. But this is more reminiscent of Windows than Linux!
