Been doing some looking around. It looks like the Raspberry Pi 5 16GB is the fastest card. I'd also need some sort of power supply that can do a graceful restart/power down with the car's ignition switch. So far I've found one that works with the Pi4 but not the Pi5. For software it'll probably be Volumio but I'm open to other suggestions. I'll also use the Raspberry touch screen for the interface.

I've also run into a problem. I'd also like to run a Raspberry Pi SSD 1TB NVMe and Raspberry Pi M.2 HAT+ for the storage, and a HiFi Berry DAC2 ADC PRO for the sound card. From what I can see it's one or the other, not both, and it's not just the specific cards I picked but a limitation with the Raspberry itself. Is there a way to run both hats on a Pi5 without using a wireless mux? Found one of them while looking around but I'm not a fan of wireless. I'm also open to any other suggestions on this. I need the extra storage for my goal of putting all my music on board and I'd rather not fiddle around with loading USB drives and swapping them out periodically like I do now, but the whole exercise is pointless without the RCA outputs on a high quality sound card.
