While contacting the actual developer is excellent advice, you might want to look at... chromium commandline switches, for example:
--hide-scrollbars
--force-device-scale-factor=2.0
I don't know if you can edit/add commandline switches for starting chromium in fullpageos.txt, but it looks like you you can add them to to ones already in /etc/chromium-browser/customizations/00-rpi-vars.
Disclaimer, the page with switches might be out of date, it was the first one I found. Also, I have not booted FullPageOS, only browsed the image file.
